Eggplant with Risotto

Hey guys! Lately I have been trying to clean up my eating habits and get healthier. Today’s meal I am sharing was really simple I decided to go with eggplant and risotto. Both items I purchased from Publix and involved no hard labour. The eggplant cutlets are vegan friendly and breaded all that’s required is to heat and serve. The premium risotto is by Alessi it includes porcini mushrooms.

 

With that you boil some water for about 20 minutes with butter I opted for olive oil and toss the rice in and cover with a lid voila. Risotto is usually paired with a meat but I decide to switch it up and I was pleasantly surprised. Let me know what you guys think and have you tried this combination before?
